Next to our tour and tasting centre we have also opened a gourmet bruschetteria (restaurant specialising in bruschetta), since 2014 also franchising, where the traditions from Puglia and the high quality of our Everyday Oil meet, giving life to pairings which are at the same time simple and delicious.

The underlying idea is as simple as it is bold: it unites our extra virgin olive oils from Puglia with the greatest typical food from our region, bread. This is how OLI’ OLA’was born, a modern bruschetteria that combines local and selected products with the most antique condiment: extra virgin olive oil.

The importance of bread

People say that the simplest of recipes are the most difficult to do well. And nothing is truer when talking about bruschetta. The quality of the bread in this case is fundamental.

This is why we only use bread that is rigorously from Puglia made with high quality durum wheat flour and sourdough cultivated for generations. It is all produced in a small artisan bakery in the province of Bari following traditional working methods, arriving to us fresh and ready to be transformed into something exceptional.

In our bruschetteria we use only extra virgin olive oil that is produced by us, made with traditional techniques and with olives that come from our olive grove.

Our proposal, a fusion of tradition and modernity

Reinterpreting the classic bruschetta in a gourmet key could be difficult, but with the exceptional products that our territory offers us working with creativity comes naturally.

25 different bruschetta, from the most classic to the most innovative, accompanied also by seasonal creations, in such a way to take you back to the true and sincere flavours of the ingredients.

The emblem of OLI’ OLA’ is the bruschetta that carries our name, the perfect synthesis of almost forgotten typical ingredients and flavours that for generations have distinguished our territory: Fiaschetto tomato from Torre Guaceto, capocollo from Martina Franca, fresh ricotta and our PDO oil. Nothing simpler and exceptional at the same time.

OLI’ OLA’ however is not just a bruschetteria. Our proposal is rich in seasonal salads, pasta dishes, main dishes and desserts, all created with carefully selected ingredients from local suppliers, lovers like us of our territory.
